    All green coffee must be approved prior to purchase. This also means the actual coffee is tested before we buy it and then tested several times during production. Quality control checks are performed at various stages of the roasting and packaging process. These checks ensure that the packaging integrity is maintained, oxygen levels, roast color, moisture content, and grind meet our stringent specifications. The whole plant, including green coffee and packaging, is administered under GMP (Good Manufacturing Practices). The Food and Drug Administration (FDA) sets the guidelines for GMP. The company is audited by an outside inspector for compliance to the GMP standards once a year. We received a 93% grade on our last GMP audit. Within the GMP umbrella is a very strict mini-program called HACCP (Hazard Analysis and Critical Control Procedures).
